Was watching an old Rick Stein show the other night, this sounded too good to forget:
100g oatmeal
veg oil
english bacon, cut into strips
S&P
Lemon
Parsley
- Fillet the herrings
- Season, press with oatmeal until covered
- Heat oil in frying pan, with bacon until crisp
- Remove from pan, keep warm
- Fry herrings in same pan, flesh side first, until golden brown
- Put fish on plate, sprinkle with bacon, served with lemon wedges, potatoes, chopped parsley
