Watermelon Jam

From the chef at the Como Shambala in Ubud.

2.5 kg watermelon
600 gr sugar
1 liter water
3 pieces lemon zest
3 tblsp orange juice
4 pieces gelatin leaves
  1. cut watermelon into small cubes
  2. mix all the above ingredients until it thickens
