Jean-George's beet tartare
my beet-cured gravadlax
pumpernickel
butter
beet tartare
two beets
half chopped shallot
3-4 chopped cornichons
dozen chopped capers
a couple drops tobasco
chopped parsley
- make beet tartare by mixing everything in a blender but not too finely, let set overnight
- serve with gravadlax and buttered pumpernickel
